Sauteed Kale and Garlic Cream Gnocchi

SAUTÉED KALE AND GARLIC CREAM GNOCCHI
Serving Size: 2-4 people

What you’ll need:

For the Sauce

Handful of green Kale, leaves only, chopped

2 garlic cloves, minced

1/2 cup of 35% cream (or non-dairy substitute)

Salt and Pepper

1 tbsp of olive oil

Splash of water

As much Parmesan as you like

For the Gnocchi:

1 pkg of fresh Gnocchi OR make our Handmade Gnocchi

Directions

1.       On medium heat, warm olive oil in pan and add minced garlic. Gently sauté the garlic for 30-45 seconds to flavour the oil (do not brown)

2.       In a separate pot, boil the water for the gnocchi.

3.       Turn up the heat slightly under the pan with the garlic, and add the kale. Toss in the pan with the garlic and oil: make sure it combines nicely! Sauté for about a minute or until the kale starts to soften

4.       Add a splash of water in the hot pan to hear that sizzzzzzle. Continue to sauté, stirring occasionally to make sure the heat and water are distributed. Salt and pepper everything in the pan to taste!

5.       Add plenty of sea salt to the boiling water and add the raw gnocchi. In about 1-3 minutes they will start floating. They are ready to go!

6.       Remove the gnocchi from the water and add directly to the (magnificent) pan of kale.* Toss and gently combine.
*Optional: add a TBSP of grass fed butter here while sautéeing

7.       Add the cream into the pan and gently combine. Taste for salt and pepper.

8.       Sizzle everything in the cream sauce until it slightly thickens and bubbles. Add as much Parmesan as you like! It’s ready to eat!

Pearing Suggestion: add chilies, caramelized onions, bacon or all of the above to add your own twist to this dish! Leftovers? Add a splash of water to the leftovers, toss everything in an oven safe dish, top with some buttery, herby bread crumbs and bake at 350F for 20-30 min or until it starts bubbling again!
