RESTAURANT STYLE SPINACH DIP
Serving Size: 3-6 people

What you’ll need:
1 package of frozen spinach, or 3-4 handfuls of raw spinach (you will need 1 tbsp of oil if using raw spinach)
1-3 cloves of garlic (dealer’s choice!)
1 package of cream cheese
1/3 cup of goat cheese (optional)
1/3 cup of shredded cheddar or marble cheese (optional)
Salt and pepper

Directions:

1.       Preheat oven to 375F. Roast the garlic, skin on, until soft and easily squeezable in the oven. You can add an entire bulb of garlic, skin on directly onto the oven shelves. Or simply toss a few cloves onto an oven tray and roast away!

2.       In a pan heat the oil and sauté the spinach. If using frozen spinach, ensure that it is thawed. Once cooled or thawed, squeeze the spinach to remove excess liquids. You can discard the liquid or add it to your favourite soup for extra nutrients and flavour! Or you can even add it to our Sauteed Kale and Garlic Cream Gnocchi sauce!

3.       In a bowl mix the squeezed, drier spinach, cheese(s) and roasted garlic

4.       Season to taste with salt and pepper

5.       Put in oven safe container and place in the oven for approximately 10 minutes or until the dip bubbles and forms a light golden crust around the rim

6.       Serve with tortilla chips, pita squares, and/or veggies!

Pearing Suggestions: Add bacon or roasted artichoke if desired!

*Chef Tip: Made too much dip? Freeze it! It’ll easily thaw in the oven when you’re ready to serve it next time!
