I Can’t Believe it’s Not Delivery Buffalo Cauliflower

I CAN’T BELIEVE IT’S NOT DELIVERY BUFFALO CAULIFLOWER  
Serving Size: 2-5 people, or about 10-15 pieces

What you’ll need:

1 cup of all purpose flour

1 ½ tablespoons - baking powder

I mini can of club soda or tonic water

½ tsp of salt

Seasoning - as desired

About 10-15 pieces of cauliflower or more, cut to desired chunk size

Cooking oil, 5-10 cups or as needed

Desired Buffalo sauce

Directions:

1.       Fill a small-medium sized pot ¾ of the way with your favourite cooking oil. Turn the element on high and start heating the oil.

2.       In a medium- large bowl, mix the flour, salt and baking powder until well combined.  Create a well in the mixture.

3.       Add any dried seasoning here that you like, or none! (we’ve tried garlic powder and TexMex spice and they were both a huge hit!)

4.       Pour about ½ the can of the soda water gently into the well to combine.

5.       Gently mix the batter so as to not agitate the bubbles. The batter should be slightly thicker than a standard pancake batter. Add more soda water if needed.

6.       Check the oil to ensure it is at the right temperature. You can do this by dropping a small dollop of the batter into the oil. If it begins to fry and bubble immediately, then it’s ready.

7.       Coat each chunk of cauliflower and gently place into the hot oil as you go. Cook for about 1-3 minutes, or until the chunks are a gorgeous golden brown.

8.       When each chunk is ready, remove from the oil and place in a mixing bowl. Once all the cauliflower is complete and in the bowl, toss with your favourite sauce and enjoy!  

Pearing Suggestions: Serve this as a side to some ribs sprinkled with scallions or cilantro. Don’t forget to put aside some left overs for a great salad topper for lunch tomorrow!

*Chef’s Note: You can create a whole new dish by simply changing the sauce! Instead of Buffalo, you can try BBQ sauce, honey sesame or even Korean Gochujang!  Yum!
