Cozy Jamaican Curry Chicken

COZY JAMAICAN CURRY CHICKEN
Serving Size: 4-6 people

What you’ll need:

1 whole chicken (cut into pieces, or 4-6 pieces of chicken thighs and drumsticks)

1 white onions, diced

Few springs of fresh bunch thyme

3 cloves of garlic, finely diced

2 medium potatoes, peeled then diced into bite sized chunks

1 scotch bonnet pepper, finely diced

1 piece of ginger (slightly larger than a clove of garlic) peeled and finely chopped

½ bunch of green onions, diced

1 TSP of turmeric

2 TBSP of cumin

½ cup of curry power

½ TSP of garam masala

2 cups of chicken stock

2 TBSP of cooking oil

Salt and pepper to taste

Directions:

1.       Heat a large pot over high heat and add the oil

2.       Once the oil is heated, add the garlic, ginger, onions, green onions, thyme, scotch bonnet pepper and spices (curry powder, cumin, turmeric, garam masala), to the oil  to sweat. Trickle in small amounts of water to avoid sticking if the pan gets too hot.

3.       Add  the chicken and stir to coat chicken in the gorgeous flavours. Let the meat sear for a 1 minutes, stirring occasionally.

4.       Add the potatoes and mix everything together. Cook for 1-2 minutes.

5.       Add chicken stock and stir to make sure everything combines gently.

6.       Season with salt and pepper

7.       Turn heat down to a medium, and cover. Let the curry simmer for at least 30 min, stirring occasionally

8.       Check the chicken for doneness and the sauce for thickness (the potatoes will break apart to thicken sauce. Add liquid if too thick or if you prefer thinner sauce)

9.     Taste for salt and pepper, adjust as needed. Remove the Thyme stalks and discard.

10.   Serve over white rice, or with a side of roti!


Pearing Suggestions: Like it spicy? Use 2-3 scotch bonnet peppers instead of 1 for an incredible kick (and don’t forget a side of pineapple soda)!
